I was worried about this so I added the enzyme to 161 degree water first to kill off any bugs, then added to the fermenter. It's been almost a week and gravity hasn't changed at all. I'm worried I altered the enzyme in some way at that temp. <br /><br />Do you just add the tsp of enzyme without sanitizing anything?
