Hoptonite dIPA - from our series on how to brew a ridiculous double IPA - Read to the end to read what we learned on brew day, and what we learned at tasting.

5.5 Gallon batch

IBUs - 146
SRM - 8
ABV - 8.7

Fermentables
13.00 lbs two row malt - We used Cargil Pale Ale Malt
 1.30 lbs Cara/crystal 40
 1.00 lbs Carapils
   .50 lbs Acidulated Malt

Hops - All hops Pellet - Bag your hops.
3.30 oz Centennial at 70 Minutes First Wort Hops -  10.5% Alpha Acid - 34.65 AAUs
0.75 oz Nugget at 45 Minutes - 14.3% Alpha Acid - 10.75 AAUs
1.00 oz Galaxy at 30 Minutes - 14.2% Alpha Acid -  14.2 AAUs
2.50 oz Citra at 0 Minutes - 13.7% Alpha Acid -  34.25 AAUs
1.00 oz El Dorado at 0 Minutes - 16% Alpha Acid - 16 AAUs
1.00 oz Cascade at 0 Minues - 7% Alpha Acid - 7 AAUs

Dry Hops - All Hops Pellet - Bag your hops 
1.00 Galaxy - 14 days
1.00 Mosaic - 14 days
1.00 Citra - 14 days
0.50 El Dorado - 2 days
0.50 Galaxy - 2 days
0.50 Citra - 2 days
0.50 Mosaic - 2 days

Yeast  - Fermentis Safale US05 - 15 Grams

Extras
1.00 Ounce of lemon peel - last 10 minutes
1 tsp Yeast Nutrient - 10 minutes
1 tsp of Irish Moss -  10 minutes

Single Infusion Mash - 152 F for 60 minutes

What we learned on brew day - 
You have to bag your hops.  We lost so much volume to hop debris.  So Just bag your hops, and bag your damned hops in fermentation as well.  Or plan on making 7.5 gallons if you want to take 5 gallons to packaging.  There is just so damned much.

What we learned at tasting - 
A world class dIPA.  Probably the best I have tasted since I got to try Pliny the Younger.  It is truly insanely good.
